Have you ever come across a recipe and become completely clueless on what size baking dish to use?  Many older recipes call for 1 Qt, 1 1/2 Qt or 2 Qt baking dishes.  We are here to help you navigate through the confusion and use the correct size baking dish.  Here's a little tip to start you off.  If you flip over the baking dish, most of them are printed on the bottom with the size.  IT can be hard to see the writing, but it's usually in the center.
We love old baking dishes.  Corning ware and Pyrex are our favorites. Maybe that is because we have our very own vintage dishes that have been passed down.  Or it could be because they can be used in the oven or the microwave.
I am always using my blue and white cornflower patterned Corning ware and my circular golden Pyrex with white flowers. I find it handy that if you have leftovers, you can cool it down, and then top with the glass lid and store the leftovers in the refrigerator.
Let's start with Corning ware.  The most common sizes you will see are a 1 Qt, 1 1/2 Qt and 2 Qt.
This is the 1 Qt. baking dish.  It is more or less a square that is approximately 5 1/2 inches by 5 1/2 inches in size and 1 1/2 inches in height.
The next size up is the 1 1/2 inch Pyrex. It is the same size at approximately 5 1/2 inches by 5 1/2 inches; however, it is deeper at 2 1/2 inches.  You can fit quite a bit more in this one but it will take longer cook time to get the center cooked or heated through. I use is for my Leftover Donut Bread Pudding. Sometimes I make smaller portions of casseroles knowing that my family doesn't need a big batch including Mom's Tuna Noodle Casserole and Salmon Casserole.
The 2 Qt. baking dish keeps the same height of 2 1/2 inches but increases the size to approximately 6 1/2 inches by 6 1/2 inches.  This one is closest in size to an 8 inch by 8 inch.  I swap out this pan often when it calls for an 8 x 8 inch pan.  It is perfect for our Old-Fashioned Apple Cake with Caramel Sauce and Easy Cherry Crisp. I also use it for main dishes like our Baked Cranberry Pork Chops and Grandma's Chicken and Rice Casserole.
I also have several "mini" Corning ware baking dishes. This one holds 2 3/4 cups.  It's height comes in at 2 inches and it's size is mini at 4 inches by 4 inches.  I use these most often for leftovers or to hold smaller batches of recipes like our 3 ingredient Chicken Salad and Bologna Salad.
Recently, I found a new baking dish for my collection in the same blue cornflower pattern.  It is a circular 1 inch height, 6 1/2 inch diameter and has a handle.  It was perfect for our Hot Crab Dip. It is also fun to make "mini" crustless quiche recipes including out make-ahead Ham and Cheese Quiche and Cheeseburger Quiche.
Let's move on to the circular Pyrex.  I have a smaller 1 Qt that is 3 inches tall and has a diameter of 5 inches.
The bigger size is 2 Qt that is the same height of 3 inches by has a diameter of 7 inches. I like using this one for breakfast like our Cheesy Egg Casserole.
